Pumpkin Cream Cheese Muffins

INGREDIENTS

  • 6oz Cream Cheese
  • 3 TBSP Powdered Swerve Sweetener
  • 1 TBSP Heavy Cream
  • 1/2 TSP Vanilla
  • 2 Cups Almond Flour
  • 1/2 Cup Powdered Swerve Sweetener
  • 1/4 Cup Butterscotch Candy Recovery
  • 2 TSP Baking Powder
  • 2 TSP Pumpkin Pie Spice 
  • 1/2 TSP Salt
  • 2 Large Eggs
  • 1/4 Cup Melted Butter
  • 1/2 Cup Pumpkin Purée
  • 1/4 Cup Almond Milk
  • 1/2 TSP Vanilla Extract

APPLIANCES

Please note that for this recipe you will need the following appliances.

  1. Two Large Mixing Bowls
  2. Measuring Cups
  3. Muffin Pan
  4. Whisker
  5. Wooden Spoon
  6. Metal Spoon
  7. A Standard Size Oven

INSTRUCTIONS

For the Filling

  1. Pre Heat Oven to 325 Degrees F
  2. In one of the two large mixing bowls combine 6 OZ of Cream Cheese (soften)
  3. 3 TBSP Powdered Swerve Sweetener
  4. 1 TBSP Heavy Cream
  5. 1/2 TSP Vanilla
  6. Now take your electric whisker and whisk together all of the ingredients until the mixture is at a smooth consistency.
  7. Set bowl aside, we will come back to this mixture!

For the Muffins

  1. Take your second large bowl and first combine all of the following dry ingredients
  2. 2 Cups of Almond Flour
  3. 1/2 Cup of Powdered Swerve Sweetener
  4. 1/4 Cup of our Butterscotch Candy Recovery
  5. 2 TSP Baking Powder
  6. 2 TSP Pumpkin Pie Spice
  7. 1/2 TSP Salt
  8. Take your whisker and whisk together all of your dry ingredients
  9. Now lets add in our wet ingredients
  10. 2 Large Eggs
  11. 1/4 Cup Melted Butter
  12. 1/4 Cup Almond Milk
  13. 1/2 TSP Vanilla Extract
  14. Take your Wooden Spoon and evenly mix together all of the wet and dry ingredients until the mixture is smooth.
  15. Take your Non Stick Muffin Pan and spray lightly with Pam Olive Oil
  16. Place a Tablespoon full of the Muffin Mix and add it to each Muffin Tin
  17. Take your Metal Spoon and spread the Muffin mixture evenly
  18. Fill each Muffin Tin with your Cream Cheese filling you made at the begging of this recipe, about 1 TBSP full for each muffin.
  19. Next top the Cream Cheese filling with the rest of the Muffin Batter
  20. Place Muffin tin into the Oven that is heated at 325F for 23-25 Minutes
  21. Let the Muffins cool once they are done baking
