Our question is this… How do you PROGENEX?

Banana Pancakes!

So Simple it’s ridiculous! Sometimes you just need pancakes.

1 banana (small)
1 egg
1 scoop vanilla progenex protein
1 tbsp almond flour
1 tbsp coconut flour
all items below optional (but I add them)!
splash of vanilla
pinch of salt
pinch of nutmeg
pinch of cinnamon

Mix well until it forms batter. Pour onto heated (low heat) pan with cooking spray or coconut oil. Let cook for several minutes on each side. You will know when to flip them. If you don’t you need to spend more time in the kitchen! =]

*modifications: if you are not paleo then you can sub the almond/coconut flour with 1 ½ Tbsp pancake mix. This does give the pancake a fluffy feel like a pancake.
You can also add a pinch of baking powder with almond/coconut flour to help your pancakes rise better.

Top with your favorite toppings. I have used
fresh strawberries
fresh blueberries
bacon (duh!)
bananas
pure maple syrup

Fresh strawberry syrup! So simple
handful of fresh berries (4-5)
1-2 tsp almond milk
2 tsp pure maple syrup

Use emulsifier (hand held blender). This is the best to use. Blend it up. Pour on top! This is a great way to lessen your calories in place of syrup. Enjoy ~
